Lobster Mac and Cheese
Servings: 6 to 8
Cook time: 1 hr.
Pound Cavatappi or Elbow Macaroni
8 oz. whole milk
8 oz. heavy cream
8 tablespoons unsalted butter
½ cups all-purpose flour
8 oz. smoked Gruyere Cheese shredded or (2 Cups)
12 oz. sharp cheddar cheese shredded or (4 cups)
½ teaspoon fine ground black pepper
½ teaspoon salt
1 ½ lb. cook diced lobster meat
1 ½ cups fresh bread crumbs
1 table chopped Italian parsley
1 tablespoon grated parmesan cheese
1 teaspoon lobster base (optional)
Preheat oven to 375° F
Boil pasta in a large pot of salted water and drain well
Heat milk on low in a 2qt pot. In a separate 4qt pot, add 6 tablespoons butter and flour. Cook stirring with a whisk on low for 2 minutes. Add hot milk and cook while stirring for two more minutes or until thick and smooth. Turn off heat. Add cheese, salt, pepper, lobster and pasta. Stir well and transfer to 6 to 8 gratin dishes. Melt the remaining butter and toss in a small bowl with crumbs, parsley and parmesan. Bake for 30 minutes or until crumbs are golden brown.
